Hearty Taco Soup

This comforting taco soup blends savory spices, ground turkey, and safe ingredients to create an easy, hearty Alpha-Gal-friendly dinner.

Ingredients
  

  • 1 lb Ground turkey
  • 2 cans Pinto or Kidney Beans
  • 2 cans Black Beans
  • 2 cans Petite Diced, Diced or Crushed Tomatoes This is a preference
  • 1-2 cans Corn Kernels, drained
  • 8 tbsp Taco Seasoning - Homemade Gluten Free See Blog for Homemade Taco Seasoning
  • 6 tbsp Ranch Seasoning - Homemade Dairy Free See Blog for Homemade Ranch Seasoning
  • 2 tbsp Oil Olive Oil or Avocado
  • 1 small Onion (optional)

Equipment

  • 1 Instant Pot or Crockpot
  • 1 Large Pot (if cooking on the stovetop)
  • 1 Large stovetop pan (if using a crockpot)
  • 1 Spoon (to stir ingredients)
  • measuring spoons

Method
 

Instant Pot
  1. Set your Instant Pot to saute and add your oil, one hot, add your diced onion. Saute your onions until they are transparent or cooked to your desired tenderness.
  2. Add the ground turkey and cook through.
  3. Once the ground turkey is cooked through you can begin adding your other ingredients to the pot and mix it well.
  4. Once all the additional ingredients are in the pot put the lid in place and lock it. Set the pressure valve to sealed and set the cooker to HIGH.
  5. Set the time to 10 minutes and then press start. Quick release after 5 minutes.
  6. Serve with tortilla chips, dairy free sour cream and or dairy free cheese and enjoy!
Crockpot
  1. In a medium sized pan heat up the oil, once hot, add your diced onion. Saute your onions until they are transparent or cooked to your desired tenderness.
  2. Add the ground turkey to the pan with the onions and cook through.
  3. Once the turkey is cooked through you can add the meat to your crockpot.
  4. Add all additional ingredients, mix well and set the crockpot to Low for 6-8 hours.
  5. Serve with tortilla chips, dairy free sour cream and/or dairy free cheese and enjoy!
Stovetop
  1. In a large stockpot heat the oil, once hot, add your diced onion. Saute your onions until they are transparent or cooked to your desired tenderness.
  2. Add the ground turkey to the pot with the onions and cook through.
  3. Once the turkey is cooked through you can add all additional ingredients and mix well.
  4. You will need to cover and cook the soup on LOW for at least 30 minutes or until all flavors are incorporated and beans are soft. You will need to stir this often so it doesn’t burn to the bottom of the pan.
