Hearty Taco Soup: Savory, Bold Flavor


If you love taco night, this easy Alpha-Gal safe taco soup will become your new favorite. All the classic taco flavors in a warm, hearty bowl. It’s cozy, comforting and full of flavor while staying completely safe for anyone avoiding mammal ingredients. It’s a favorite in our house and a go to on a cold night.

As the mother of two teenagers involved in sports and other activities, I rely on recipes that fit our busy schedule. This one is perfect because it works in both the Crockpot and the Instant Pot. You can brown the ground turkey ahead of time, then toss everything into the Crockpot in the morning and set it to low for 8 hours. Most modern Crockpots will switch to “warm” automatically until you’re ready to eat. If you’re using the Instant Pot and already have your meat prepared, you can add everything when you get home from work. It will be ready in about 30 to 45 minutes. The Ingredients

There are several canned ingredients in this soup, so it’s important to discuss a few specifics. Some brands of canned beans are not Alpha-Gal safe, so I want to share the ones I use that have safe ingredients. Likely you could find other safe options out there as well. When shopping, just be sure to check the thickener used in the beans and look for any added ingredients.

Often times brands will use hidden ingredients like preservatives, firming agents, emulsifiers, thickeners, etc. Things like – monoglycerides, diglycerides, natural flavors (often animal byproducts), etc.

Safe bean choices:

  • Simple Truth Organic (Kroger) – Great Northern, Pinto Beans, and Kidney Beans are all Alpha Gal Safe
  • Bush’s Black Beans and Seasoned Black Beans
  • Goya – Black Beans, Pinto Beans, Kidney Beans

Ground Turkey I buy in bulk at Sam’s and just freeze it in 1.25 lb packages. So I add a little more than a pound of meat to my soup. The brand I buy is Jennie-O and it can be found at most grocery stores. If using another brand just be sure to check the ingredients label and make sure there is not potential for cross contamination, etc.

Canned corn comes in many different shapes and sizes. This recipe just calls for yellow or white kernel corn. So you don’t have to worry about thickeners in the creamed corn, etc. Green Giant or Del Monte have always been brands I trust and buy often. Most often I use the yellow kernel corn for this recipe but the white shoe peg corn is also very good in it. This is just your preference.

Canned Tomatoes come in literally every shape and size. There’s a plethora to choose from. For this recipe it really is up to you as to what type you put in. If your family is like mine I often times will just use petite diced or even crushed because my kids can’t stand the huge chunks of tomato throughout. However, if your family loves tomatoes you could go with the diced tomatoes or whole tomatoes. Totally up to you.

Seasoning – Homemade vs Store Bought

Taco Seasoning can be bought in small packages on the grocery store shelf but it’s just as easy to make at home in bulk. Because of this allergy I cook mostly at home so it just makes sense to have bulk ingredients handy. I always keep large “Sam’s size” seasoning containers in the pantry – Chili Powder, Cumin, Oregano, Garlic Powder, Onion Powder, etc. I can quickly throw together seasonings when I need them. Ranch Seasoning packets that you buy at the store are not Alpha-Gal safe because they contain dried milk ingredients which are dairy. Therefore, there has to be another option that is dairy free to use in this recipe. I have found several recipes that I’ve tried over the years but one that tastes the most similar in my opinion. Cooking Method

Things like soups and stews are popular because there are so many different options when it comes to ways to cook them. Below, in the recipe, you will find multiple options for methods of getting this hearty soup onto your table for dinner. You can do something as simple as throw it all in the crockpot and have it ready hours later or you can throw it all in the Instant Pot and have it on the table in 30 to 45 minutes. There’s also always the option of cooking it on the stovetop if you have time to be in the kitchen. Several options that allow you to get a meal on the table that is not only Alpha-Gal safe but gluten and dairy free as well.

Hearty Taco Soup

This comforting taco soup blends savory spices, ground turkey, and safe ingredients to create an easy, hearty Alpha-Gal-friendly dinner.
Prep Time 15 minutes
Course: entree, dinner, Main Course, Soup
Cuisine: Mexican

Ingredients
  

  • 1 lb Ground turkey
  • 2 cans Pinto or Kidney Beans
  • 2 cans Black Beans
  • 2 cans Petite Diced, Diced or Crushed Tomatoes This is a preference
  • 1-2 cans Corn Kernels, drained
  • 8 tbsp Taco Seasoning – Homemade Gluten Free See Blog for Homemade Taco Seasoning
  • 6 tbsp Ranch Seasoning – Homemade Dairy Free See Blog for Homemade Ranch Seasoning
  • 2 tbsp Oil Olive Oil or Avocado
  • 1 small Onion (optional)

Equipment

  • 1 Instant Pot or Crockpot
  • 1 Large Pot (if cooking on the stovetop)
  • 1 Large stovetop pan (if using a crockpot)
  • 1 Spoon (to stir ingredients)
  • measuring spoons

Method
 

Instant Pot
  1. Set your Instant Pot to saute and add your oil, one hot, add your diced onion. Saute your onions until they are transparent or cooked to your desired tenderness.
  2. Add the ground turkey and cook through.
  3. Once the ground turkey is cooked through you can begin adding your other ingredients to the pot and mix it well.
  4. Once all the additional ingredients are in the pot put the lid in place and lock it. Set the pressure valve to sealed and set the cooker to HIGH.
  5. Set the time to 10 minutes and then press start. Quick release after 5 minutes.
  6. Serve with tortilla chips, dairy free sour cream and or dairy free cheese and enjoy!
Crockpot
  1. In a medium sized pan heat up the oil, once hot, add your diced onion. Saute your onions until they are transparent or cooked to your desired tenderness.
  2. Add the ground turkey to the pan with the onions and cook through.
  3. Once the turkey is cooked through you can add the meat to your crockpot.
  4. Add all additional ingredients, mix well and set the crockpot to Low for 6-8 hours.
  5. Serve with tortilla chips, dairy free sour cream and/or dairy free cheese and enjoy!
Stovetop
  1. In a large stockpot heat the oil, once hot, add your diced onion. Saute your onions until they are transparent or cooked to your desired tenderness.
  2. Add the ground turkey to the pot with the onions and cook through.
  3. Once the turkey is cooked through you can add all additional ingredients and mix well.
  4. You will need to cover and cook the soup on LOW for at least 30 minutes or until all flavors are incorporated and beans are soft. You will need to stir this often so it doesn’t burn to the bottom of the pan.
