This quick and easy pressure cooker (or Instant Pot) chili is the perfect comfort meal without the fuss. It’s completely Alpha-Gal safe. With a jar of homemade chili seasoning, ground turkey, and a few cans of beans and tomatoes, you can have a hearty, flavorful chili on the table in no time. It’s gluten-free, dairy-free, and mammal-free, making it a simple, reliable recipe for busy days. Providing something warm, filling, and homemade.

This chili recipe begins with a DIY. As easy as it is to go to the grocery store and buy a chili seasoning mix there are very few that are allergen free and safe. Many of these seasonings contain gluten or other powdered products that are unsafe for those with Alpha-Gal. Ingredients such as animal-derived thickeners or anti—caking agents. So yes, you can grab a packet of chili seasoning mix at the store but check your ingredients first.
I choose to just make a large batch at home with ingredients I know are safe and then store it in a mason jar with a tight fitting lid. This has served me well for years and the mixture keeps for a long time. Ingredients are listed below but you’ll find the exact amounts in the recipe posted at the end.

DIY Chili Seasoning
Homemade Chili Seasoning Mix
Ingredients
- Chili Powder
- Garlic Powder
- Ground Cumin
- Onion Powder
- Oregano
- Paprika
- Thyme
- Black Pepper
- Salt

- In your airtight glass container, combine all ingredients. You can either stir or cover and shake ingredients until mixed. 4 TBSP of this seasoning mixture is equivalent to one store bought package of seasoning mix.
The Chili Options

Chili is an easily customizable food. The chili recipe that I’m posting here is pretty full of beans. So if you aren’t really a bean person this may not be your chili. I love filling it with beans because it provides extra protein, along with the turkey, that I am always looking for and most of the time in need of.
It’s a pretty simple recipe layout though, you add some sort of ground meat, 4 cans of beans, two cans of tomatoes and chili seasoning. That’s it. The options of what kind, are truly endless. I’ll put a list of ones I use below:
- Beans:
- Black beans
- Pinto Beans
- Great Northern Beans
- Kidney Beans
- Other optional additions:
- Green chili peppers
- Lima beans
- Corn
- Meat:
- Ground turkey
- Ground chicken
- Ground Ostrich
- No meat and just have beans
Tomatoes are the base for this recipe I would say. I always use the crushed peeled tomatoes and add in some petite diced tomatoes. We don’t like huge chunks of tomatoes but if you do, by all means throw in some whole tomatoes or large diced tomatoes.
I use anywhere between 1 to 2 quarts of crushed tomatoes and 1 to 2 – 14.5 oz cans of petite diced tomatoes. Just depends on how many people I’m cooking it for or if I want a ton of left overs for the week.
I often make extra for left overs for lunches or even just to freeze for a meal later.

Cooking Methods

There are several options for cooking chili: stove top to slow cooker to instant pot and other ways I’m sure. More times than not, I choose the instant pot because the flavor is just unbeatable. Being cooked under pressure, in my opinion, is better. It melds all the flavors together in a way that the stove top and slow cooker can’t.
In the recipe below I’ve given all the specifics for each method of cooking. The Instant Pot makes it easy because there is literally a “Chili” button. You fill the pot, press the button, close and seal the top and that’s it. It’s done in 30 minutes.

Serve hot topped with some Daiya vegan cheese shreds and some plant based sour cream! This chili also pairs well with things like Fritos, Tostitos or even some Alpha Gal safe, gluten free corn bread. (Recipe coming soon)

Homemade Turkey Chili

- In a sauté pan on the stove top or using the Instant Pot sauté function, brown your ground meat – adding 4 tbsp of chili seasoning mixture while cooking.
- Once meat is browned, add all ingredients to the Instant Pot – tomatoes, beans, meat and additional 2 tbsp of seasoning. Stir until combined.
- Lock the Instant Pot lid in place and turn to “seal”. Press the Chili button (or choose HIGH pressure for 30 minutes). Instant Pot will start automatically (other pressure cookers may need to press START).
- When the 30 minutes are up you will need to do a quick release by moving the seal to “venting” to release the pressure. If you leave it sitting the chili will likely burn to the bottom.
- Stir and serve, will be hot! Top with dairy free cheese and sour cream! This chili pairs well with Fritos, Tostitos or gluten free, alpha gal safe corn bread.
- In a sauté pan on the stove top, brown your ground meat – adding 4 tbsp of chili seasoning mixture while cooking.
- Once meat is browned, add all ingredients to the slow cooker- tomatoes, beans, meat and additional 2 tbsp of seasoning. Stir until combined.
- Set slow cooker to LOW for 6 to 8 hours or HIGH for 4 hours.
- Stir and serve, will be hot! Top with dairy free cheese and sour cream! This chili pairs well with Fritos, Tostitos or gluten free, alpha gal safe corn bread.
- Brown your ground meat – adding 4 tbsp of chili seasoning mixture while cooking.
- Once meat is browned, add all ingredients to the pot- tomatoes, beans, meat and additional 2 tbsp of seasoning. Stir until combined.
- Bring to a low boil and let simmer, slightly covered, for 30 minutes. Stir this frequently so it doesn’t stick to the bottom of the pan and make sure the simmer is LOW.
- Stir and serve, will be hot! Top with dairy free cheese and sour cream! This chili pairs well with Fritos, Tostitos or gluten free, alpha gal safe corn bread.
